2. EOS lip balm
. Seriously the best stuff, especially during the winter when lips get chapped so easily.
3. Nieces and Nephews. Can’t get enough of them!
4. Soups. Hearty. Filling. Warm.
5. Holiday drinks and chunky wool scarves.
Sometimes you just need to pack up and take a surprise visit to see your sister you miss like crazy for a weekend. So, late Friday afternoon, that’s what Loren and I spontaneously decided to do. I got home from work around 6 pm, we left around 7, and got to Crystal & Joel’s around 10:30 pm. I had texted Joel earlier about coming, but Crystal didn’t have a clue. She was putting Timothy (22 month old nephew) to bed when we rang the doorbell, so Joel answered the door, let us inside then went and told Crystal that two homeless people from Indiana were at the door and looking for somewhere to spend the night. Needless to say, she was rather surprised when she saw us! We spent the weekend touring their new house, catching up, playing with Timothy, cooking together, visiting their new church, eating and just relaxing. It was a much needed visit and I wish it could happen more often!
Not everyone likes it. But we sure do in this family! Growing up in Germany, we had sauerkraut fairly regularly, and once we got married, I was happy to discover that Loren was quite fond of it. And since ALDI
carries it year round, we’ve been having it about once a week lately.
I prepare it either with pork chops and mashed potatoes or hotdogs and pan-fried gnocchi, and here is how I made it this week:
Sauerkraut and Wurst:
1 tbsp olive oil
1 small onion, diced (optional)
1 package hotdogs, sliced
¼ apple, diced
1 jar Sauerkraut, drained
Salt and Pepper to taste
In a wide sauce pan, heat up the olive oil. Add onion; saute until tender. Slice the hotdogs and stir in. When the hotdog slices start to brown, add the apple. Once the apples are soft, stir in the sauerkraut, salt and pepper and let heat through.
1 package Gnocchi
1 tbsp butter
dash of olive oil
1 tsp minced garlic
½ cup Parmesan cheese
Bring four quarts of salted water to a vigorous boil in a medium pot over high heat. Drop the gnocchi into the boiling water a few at a time, stirring gently and continuously with a wooden spoon. Cook the gnocchi, stirring gently, until tender, about 1 minute after they rise to the surface. Remove from heat and drain. Meanwhile, melt the butter with a dash of olive oil in a large frying pan. Dump the gnocchi into the pan, and spread them around with the back of a spoon to create an even layer over the pan. Let the gnocchi fry for a couple of minutes, or until they turn golden brown. Turn them gently with a spatula, and cook on the other side until brown and crispy. Toss in the Parmesan cheese.

It’s been just over six spectacular months since I walked down a burlap aisle on a perfect early summer evening to meet my groom and start this walk called marriage with him. I can’t imagine life any other way now and every day truly just gets better. I am so thankful for the many examples of godly marriages God has put in our lives (especially our parents!) and pray that we will be the same to those we come across in our lives. I love you, babe!
