Slow and Quiet

Nothing better than a weekend recap on a Wednesday!

Friday and most of Saturday, Loren was at a speech therapist conference, so I had some time to myself. Which I quite enjoyed. I made myself a latte and ate breakfast with the Gilmore Girls (anybody else excited for November 25!?), then cleaned the apartment, did laundry, worked on projects and other fun stuff. A good productive Saturday (obligatory saved Snapchat pictures below). When Loren got home from his conference, we grabbed dinner and were going to go to a park, but ended up having dinner in the cornfield we found for a photoshoot a couple weeks ago.

Sunset dates 🙂

Sunday afternoon, we made a trip to Starbucks to take advantage of the $3 grande fall speciality drinks and work on some computer projects and business. Later that evening, we worked on the headboard while watching Fixer Upper for inspiration and waited for my cousin {sister} Dennae from SC to arrive! She finally made it, and is here for a week. More on her visit to come later!

Happy Friday and Happy {officially} Fall!

img_4596TWO // Rice Krispie Treat Day. Did you know this was a thing? Apparently it is, and it was celebrated accordingly at work. Rice Krispies are one of my weaknesses.

THREE // Bottle art. I plan on doing a similar project this weekend!

Flatbread Chicken Pizza

As much as I love to cook, there’s nothing I love more than a quick and easy meal after a long work day. This easy flatbread pizza definitely takes the cake. The best thing is, that depending on whatever I have on hand, I can always switch up the toppings!

Ingredients:
4 Naan breads
1/2 cup ranch dressing
2 tbsp hot sauce
1 chicken breast, grilled and chopped
1/4 cup bacon
1 cup black beans
1/2 red pepper, chopped
1/2 yellow pepper, chopped
1/2 scallions, chopped
1/4 cup fresh cilantro, chopped
2 cups mozzarella cheese, shredded

Directions:
Preheat the oven to 350F. Place the naan on two baking trays. Mix together the ranch dressing and hot sauce and spread over the naan. Scatter the rest of the ingredients, saving the cheese for last, over the top. Bake for 7-9 minutes until the cheese is golden brown and bubbly. Serves 4 (unless you’re super hungry).

Did We Buy a Truck?

Happy Monday!
Now that I’m (hopefully) back on the regular blogging track, here is another monumental weekend recap:

Friday {date} night, we kept it low-key with a trip to pick up some more pallets and then to Best Buy in search of the perfect iPhone camera lens attachment so I can take spectacular pictures for my blog without lugging the big camera around. We didn’t find the one we were looking for at the store, but we’ve got our eye on this one. Any recommendations from you guys? By the time our fruitless shopping trip was over, we were pretty hungry and headed back home for a candlelight dinner and movie.

Saturday we slept in a little later than intended, made brunch and planned out the rest of the weekend. We took one of our cars to CarMax to get an estimate (for the nearish future) and tried out some of the cars in the lot for fun. After CarMax and several other errands, we met up with Ryan and Kristel for dinner and coffee at a newly opened coffee shop (The Well) Loren recently discovered. Sweet time with sweet friends!

Sunday after church and lunch, we took care of the next two weeks’ grocery shopping (worst day to do this), lunch prepped for the week and worked on projects. I should note that we had this season’s first PSL. And probably the last. I’m holding out for the Caramel Brulée Latte!

Since I’ve slacked on Friday posts in the past month, I’m going to pull some favorites from the past several weeks.

ONE // This welcome mat. I love walking up to my door after work each day and this adorable mat welcoming me. Target for the win!

img_4464TWO // “Welcome Home” window in kitchen. Along the same lines as the doormat, I love coming into the kitchen and looking out my welcoming “window”.

THREE // We finally have our own washer and dryer! After over two years of dragging our clothes to family members’ houses and sharing community washers and dryers, this has been simply amazing to have our own.

img_4576FIVE // Fall transitional clothing. After searching high and low, I finally found this vest (at a reasonable price) that I’ve been wanting for so long! Pretty sure I will be wearing it every day from now on.

Creamy Cucumber Salad

It’s Recipe Wednesday!
If you like cucumbers, you will love this salad. I like making this during the summer, but it’s great any time of the year. A perfect side dish for a cookout or potluck.img_4568Creamy Cucumber Salad

Ingredients:
2 large cucumbers
½ cup sour cream
¼  cup natural yogurt
2 tbsp dry ranch dressing
1 tsp dried dill weed
1 tsp chopped fresh parsley parsley (optional)
½ tsp  lemon juice

Directions:
Peel and slice the cucumbers into very thin slivers and place in a large bowl or serving dish. In a small mixing bowl, mix together the rest of the ingredients, then pour over the sliced cucumbers and stir well.
Enjoy!

Falling for Fall

Between moving our home, moving at work (thankfully just up 2 floors), home projects, bachelorette parties and weddings, blogging has taken a back seat. But I plan on pulling it back to the front and hopefully this will be the last post to get caught up on life lately. Now, please sit back and enjoy this little update with a variety of pictures.

September Goals

Who’s ready for crunchy leaves falling, sweaters and puffy vests, pumpkin everything and cool mornings? While summer is my absolute favorite season, I love the bright and clear fall skies, finally pulling out the booties and cardigans and lighting lots of fall candles.
I realize we are almost halfway through September (how is this possible!?), but it’s never too late for some monthly goals, right?

First up, let’s check on August Goals:
~ pack up and move to new apartment
~ set up appointments I’ve been putting off (like an eye exam)
~ paint our new apartment
~ spend some time at the pool (way too busy)
~ go to the Indiana State Fair
~ build a pallet headboard (started on it!)
~ celebrate 4 years of dating

September Goals:
~ finish the pallet headboard
~ start blogging regularly again
~ hang up the rest of the wall decor around the apartment
~ order a canvas wedding picture
~ find some good fall candles
~ try 3 new crockpot recipes
